Naan Veggie Pizza

1 Naan/Flatbread

Olive oil

¼ C. red onion, chopped

1 T. garlic, minced

½ red pepper, chopped

¼ yellow pepper, chopped

¼ zucchini, chopped, optional

5 mushrooms, chopped, optional

5 cherry tomatoes, sliced (or small handful of sun dried tomatoes), optional

½ C. marinara or pizza sauce, optional

Small handful of spinach, chopped

Grated cheese to sprinkle, if desired

And protein leftover desired (cubed chicken)

Red pepper flakes, if desired


1Preheat oven to 375° F.

2Place Naan or flatbread on baking sheet and drizzle olive oil slightly, using your hand to distribute and coat evenly.

3Bake lightly olive oiled naan on baking sheet for 5 minutes.

4In a pan, sauté chopped red onion, zucchini peppers.

5Add washed spinach and garlic just as onions appear translucent. Heat through until spinach wilts.

6Layer first some thinly sliced tomatoes, the sauté mixture, any other toppings desired, (olives, cubed cooked chicken, mushrooms etc...)

7May sprinkle any cheese desired lightly.

8Bake 10 minutes until cheese is melted and pizzas is heated through.

9Remove and let stand 5 minutes prior to cutting.

10Can sprinkle with red pepper flakes prior to serving, if desired.
