Healthy Oatmeal Waffles

1.5 C. all-purpose flour (other flours work fine too but may make waffles a bit more “dense”

1 C. oats

3 t. baking powder

½ t. cinnamon

¼ t. salt

2 eggs, lightly beaten

1.5 C. milk (your choice)

5 T. melted coconut oil

2 T. pure maple syrup

Garnish with fruit, syrup, nut butter…


1Mix flour, oats, salt, baking powder, cinnamon and se aside.

2In a separate bowl, mix milk, eggs, melted coconut oil and maple syrup. Add into the flour mixture bowl.

3Stir until blended.

4Pour batter into a lightly greased waffle iron. Do not open during baking. Remove when done.

5Top with desired fruit etc…
