Mexican Bowl with Protein

1 C. rice prepared per instructions (Minute Rice works fine)

½ yellow pepper, chopped

½ red pepper, chopped

¼ red onion, chopped

1 can black beans, rinsed and drained

Any cooked protein desired (chicken, beef, tofu, meatless crumbles)

Avocado, to mash up on top, if desired

Any sprinkle of shredded cheese, if desired

Salsa, if desired

Olive oil


1Sauté yellow/red pepper and onion with 1 T. olive oil until onion translucent.

2Set aside.

3Rinse/drain a can of black beans.

4In a bowl, layer ½ C. rice, ½ sauté mixture, 1/3 can of the black beans, any cut up protein desired. May add a small amount of cheese and avocado mashed.
